Personally I think that after making the mirepoix and adding the bouquet garni, the addition of a cinnamon stick to the mix takes it to that next level. It really chalks up the flavour.

Using meat from a roasted leg of lamb- cut into chunks and passed through a mincer gives a better flavour overall I find -tha nsay normal mince - the rest is how creative you want to be.

properly brown the mince in batches and deglaze the pan with red wine. use a good home made stock. lots of butter in the mash. a proper amount of salt.
No cheese on top. [:(!]

Shepard's has to be lamb.

Add a lamb Oxo to the minced lamb.

No harm whatever adding a bit of cheese on top of the mash.

But take it out of the oven and stick it under the grill to really get it crispy.

Simple yet perfection.

Taking the time to slow cook it properly, a hint, no more, of mint and getting the mash with that crisp outer layer followed by buttery lightness.

"Nobody’s actually made the quintessential, absolute shepherd’s pie; they all come out different. My way of doing it has evolved over the years. The basic thing is just great ground meat and throw in some peas, some carrots, but the trick I was taught by, bless his soul, he’s gone now, Big Joe Seabrook, who was my minder, is before you spread the spuds on the top, you chop up some more onions, because the onions you’ve used to cook with the meat have been reduced, and he was damn right—it just gives you that extra je ne sais quoi.… Just a tip, folks"

Both Shepherds' Pie and Cottage Pie may be made with either minced beef or lamb relative to ones preference.

The difference being that Shepherds' Pie has a fluffy mashed potato topping to resemble the fleece of a sheep, and a Cottage Pie has a topping of thin slices of whole potato placed to resemble a tiled roof.

Shepherds' lamb, and Cottage beef, is incorrect.

Agree with the comments regarding quality of meat.

A good quality of meat makes a huge difference.

I too add cheese on the top and grill it afterwards to crisp the mash. Can't beat adding a sprinkle of grated cheese[^]

saying to to cinnamon but a massive yes to a small piece of Star Anise.

Don't overdo it though otherwise it'll taste rubbish like the stuff I had at the Star at Haromme

You didn’t know it because it’s untrue, Shepherd’s Pie is made with lamb and cottage pie is made with beef, both have mash potato toppings, it’s called Cottage Pie because it was eaten by the workers who lived in cottages.

"Originally, a pie made with any kind of meat and mashed potato was called a "cottage pie". In modern British English, the dish is usually called "cottage pie" if it is made with beef. If it is made with lamb it is usually called "shepherd's pie" (because a shepherd looks after sheep)."

So a cottage pie can be made from any meat. Reminds me of Ragu, which traditionally is made from beef and pork mixed. People now just use beef, but it's still Ragu.

I'm definitely on the side of chunks of carrot. Not too big, but chunks they must be. Also, peas absolutely do not go in with the meat. You can serve them on the side later, but cooked in with the meat itself they'll overcook badly. Decent stock, properly thickened. Slug of red wine at the start, or Worcester sauce during (you don't want both).

Hottest over setting to get the cheese sprinkled mash as crispy as you can get it.

I'm fully on board with cinnamon in Chilli (a stick you can pick out at the end works better than powder imo.) Ditto in ragu for moussaka.

I'm sceptical about it in shepherds pie though.
